I have a 2000ah bank of deep cycle batteries in four paralell strings hooked to a series buss for 24 volts, what would be the effect of keeping them at 27 volts for an extended period of time, they run to an inverter that runs my pump, freezer and refrigerator, so they do get worked, there is also a wind turbine tied to the batteries, there is also a dump load controller set to dump at 29 volts, so they do get slightly boiled at least once a week.

13.6 volts x 2 = 27.4 volts.  13.6 is a common float voltage at room temp for lead acid technology, at least the valve regulated AGM's I have.  Ideally you should get the actual factory recommendation from the battery manufacturer but if that is not available I suspect you'll be fine at 27 volts float.  You mention boiling them so I assume they are flooded cells?  Do that to AGMs and you'll have duh-dead cells.
